Inspection Comments | FOLLOW UP FOR #22: THE TEMPERATURE OF FOOD HELD IN THE PREP COOLER RANGES FROM 43-50 DEGREES. THIS IS LOWER THAN DURING THE PREVIOUS INSPECTION, BUT IS STILL TOO HIGH. TCS FOOD REQUIRED FOR THE LUNCH RUSH WAS PLACED ON ICE INSIDE THE COOLER AND OTHER TCS FOODS WERE MOVED TO THE WALK-IN COOLER. ALL FOOD WILL BE PLACED IN THE WALK-IN COOLER DURING NON-PEAK TIMES. MINIMIZE FOOD STORAGE IN THIS COOLER AND ONLY STORE ITEMS THAT ARE ABSOLUTELY NECESSARY DURING PEAK TIMES ON ICE. REVIEW TEMPERATURES FREQUENTLY AND MOVE TO THE WALK-IN COOLER IF TEMPERATURES ARE ABOVE 41 DEGREES. FOLLOW UP WILL OCCUR ON 9-1-23. |
